Simple Key Lime Cake

Cake:
¾ cup oil
¾ cup orange juice
5 eggs
1 (3 oz) package lime jello
1 box lemon cake mix
  • Combine all ingredients; divide into 3 greased & floured cake pans. 
  • Bake in preheated 325 oven for 25-30 minutes. 
  • Let layers cool in pans for ten minutes and then turn out on wire racks. Cool completely. 
Drizzle:
¼ cup key lime juice
6 T powdered sugar
  • Combine juice and sugar. Prick cake layers with fork and drizzle mixture over each layer. 
Frosting:
2 (8 oz) cream cheese, room temperature
2 sticks butter, room temperature
9 cups confectioner’s sugar (8 plus 1 to balance key lime juice)
1 T vanilla
½ cup key lime juice 
1-2 T key lime zest (optional)
  • Cream cream cheese and butter. Beat in sugar until smooth. Blend in vanilla, zest, and juice.
