1 egg
1 cup milk
¼ cup oil
1 ½ cup self-rising flour
½ cup sugar
1 cup blueberries
Beat egg; stir in milk and oil. Mix in flour and sugar just until moistened (batter will be lumpy). Gently stir in blueberries. Fill lightly greased muffin tin 2/3 full. Bake 20-25 minutes at 400.
